Apple Pie Vodka

This is what's going on in our house tonight after Gilmore Girls - moonshine!
We had this excellent, toxic, apple pie-tasting drink at our Renaissance Faire on the last day. One of the participants had made it and had been selling what looked like quart-sized (32 oz?) mason jars full of it before the Faire opened. Because we have friends amongst the vendors, we got to try some in the back rooms of sundry shops.
I didn't even know what Everclear was. I now know it is the most beautiful vodka in the world. And I really have zero tolerance so this was just through cautious sips. My husband has compiled a recipe from the various sites that have them, and right now, on our stove, a pot of this is brewing:
Apple Pie - strong
5 to 1 mixture – 6 parts total
approximately 31.6 proof
1 bottle of Everclear
(you will only be using 26 oz. of it)
1 gallon apple cider
8 oz. honey
2 teaspoons cinnamon
cinnamon sticks
Heat apple cider (do not boil)
Add honey
Add 2 teaspoons cinnamon
Stir it all up from time to time
Simmer for 30 min
Cool to room temperature
Add 26 oz. Everclear
Makes approximately 156 oz.
Transfer to canning jars
Add cinnamon sticks to jars
Use mason canning jars
12 or 16 oz. jars – 1 stick of cinnamon
32 oz. jars – 2 sticks of cinnamon
use 13 or 14 – 12oz jars
use 10 – 16oz jars
use 5 – 32oz jars
Let sit for 30 days minimum

I heard all the fuss going on upstairs - stove pans clattering, cats getting in the way, cats being bundled out of the way - and then that heavenly, spice-laden scent that only apple pie can bring...so I went upstairs and grabbed the recipe just to turn y'all into moonshiners.
